Beef; It's what's for dinner

I am not really a "meat and potatoes" kinda girl. Don't get me wrong, I love meat and I love potatoes but I don't need to eat them often. So, believe it or not, I had never made a pot roast before.

Sundays are always my day for slow cooking, roasting, simmering or braising a larger meal that will feed us through the week. And, because the Packers weren't playing today I had more time to try something outside my recipe box comfort zone. I got inspired by The Pioneer Woman (one of my favorite food blogs for good 'ol comfort food) and her recipe for the Perfect Pot Roast. It was so knock-your-socks-off good that I was ready to pack my bags and head for Montana to live on a cattle farm so I could eat meat and potatoes every night! (okay, not really, but it was fun to humor the idea)
